Apulia has brought us many wonderful gourmet products not the least of which is the Bella di Cerignola Olive whose production dates back several thousands of years. Although its origin is traced back to Spain, it now has become known by the name of the town, Cerignola, which gives us the greatest production. The Bella di Cerignola Olive is prepared using the Sivigliano system which is comprised of three phases. First, the characteristic bitterness inherent in the natural state of olives is removed by a series of different rinses; then the olives are covered with a saline solution which initiates a fermentation process; and lastly, they are pasteurized and packaged. The olive itself is very large, oval, and quite "meaty". It's flesh pulls easily away from the pit and lends itself to a myriad of uses. The difference between various brands is a result of the actual brine, or saline solution that each manufacturer uses. We are particularly fond of the Fratepietro recipe which has just the right balance of saltiness and sweetness. Cerignola is a town in the Province of Foggia in the Apulia Region of Italy which borders the Adriatic Sea. Apulia has brought us many wonderful gourmet products not the least of which is the Bella di Cerignola Olive whose production dates back several thousands of years. Although its origin is traced back to Spain, it now has become known by the name of the town, Cerignola, which gives us the greatest production. The Bella di Cerignola Olive is prepared using the Sivigliano system which is comprised of three phases. First, the characteristic bitterness inherent in the natural state of olives is removed by a series of different rinses; then the olives are covered with a saline solution which initiates a fermentation process; and lastly, they are pasteurized and packaged. The olive itself is very large, oval, and quite "meaty". It's flesh pulls easily away from the pit and lends itself to a myriad of uses. The difference between various brands is a result of the actual brine, or saline solution that each manufacturer uses. We are particularly fond of the Fratepietro recipe which has just the right balance of saltiness and sweetness. The Black Bella di Cerignola Olives are riper and therefore a bit sweeter in taste and slightly softer in texture. In the gentle uplands of northwestern Sicily, Gianfranco Becchina's estate is set on an ideal location. Sixty acres of olive groves, some situated on the grounds once used by Princess Pignatelli of Spain, roll away behind the estate walls. The olives are mostly Nocellara del Belice, with Bianco Lilla and others mixed in and are not chemically treated in any way. Some of the trees are 300-year old stock from which younger trunks are grafted. A spring is tapped to deliver water directly to each tree through an elaborate irrigation system. Becchina's method of hand picking each olive during the white phase (the two week period, usually in early October, in which the green olives are coated with a light whitish sheen) is considered too early for harvest by many, but Becchina seeks those strong green flavors for his oil. Olio Verde's intense, full flavor and dense green hue are the result of such a process. The olives are stone-ground under huge millstones and then gently pressed. The unfiltered oil is stored in rotund terracotta amporae until spring, naturally clarifying itself. The olive-groves and vineyards of the Cipolloni agrarian holding extend over the hills of the green region of Umbria, in the area surrounding the town of Foligno, not far from Assisi. The holding's centre and greatest expanse of olive groves are at San Giovanni Profiamma situated to the north of Foligno along the valley of the River Topino on the clay-rich soil of gently sloping hills. Alberto Cipolloni is renown for its production of estate oils with the care and attention generally reserved for the production of estate wines. In fact, these oils are actually bottled in corked wine bottles, which are individually numbered. Our offering is from the Chiusa del Monte Cupo Estate and is comprised of 80% Moraiolo olives, 10% Frantoio olives, and the remaining 10% of Leccino and Maurino olives. Mention the Italian Lake Garda and many things come to mind. It is Italy's largest lake with the distance around it measuring 158km. Its shoreline is dotted with picturesque villages and its diverse landscape contains beaches as well as rocky cliffs. It is known for its clear water, perfect for swimming, windsurfing, and sailing. But the Lake Garda region holds a secret, which we were fortunate enough to discover on our latest scouting trip. It is home to some of the finest olive oils we have encountered in our travels. Lake Garda area is responsible for only 1% of the oil production of Italy, so its bottling are limited and most are maintained for local consumption. But the Frantoio di Montecroce has expanded enough in recent years to offer their rare pressings to the select few who have had the pleasure of tasting their beautiful golden elixir. The Montecroce Old Mill was built 50 years ago in the middle of the green hills south of Lake Garda just outside the town of Desenzano. There the Ramanzini family process the olives from their own land as well as a careful selection of olives from smaller surrounding cultivations. The predominant olives of the region are Leccino, Casaliva, Pendolino, Frantoio, Maurino, and Moraiolo. Their palate, instinct, and many years of experience motivate the particular blends they create with various combinations of these olives creating a perfectly balanced taste. The traditional stone mill wheels are still used, but have now been integrated with the newer refinishers, which produce a more consistent product. Cerignola is a town in the Province of Foggia in the Apulia Region of Italy which borders the Adriatic Sea. Apulia has brought us many wonderful gourmet products not the least of which is the Bella di Cerignola Olive whose production dates back several thousands of years. Although its origin is traced back to Spain, it now has become known by the name of the town, Cerignola, which gives us the greatest production. The Bella di Cerignola Olive is prepared using the Sivigliano system which is comprised of three phases. First, the characteristic bitterness inherent in the natural state of olives is removed by a series of different rinses; then the olives are covered with a saline solution which initiates a fermentation process; and lastly, they are pasteurized and packaged. The olive itself is very large, oval, and quite "meaty". It's flesh pulls easily away from the pit and lends itself to a myriad of uses. The difference between various brands is a result of the actual brine, or saline solution that each manufacturer uses. We are particularly fond of the Fratepietro recipe which has just the right balance of saltiness and sweetness.
